Recipe: Almond Biscuits

plate of amarettiFew of us can resist a biscuit, and after a morning hard at work in the garden (boy, it’s chilly out there) I came in to make a nice cuppa and indulge in a biscuit, but sadly the tin was empty. It seems I have been neglecting the baking this week!

If you need a quick biscuit fix, these definitely fit the bill and they fall into the category of “store cupboard standby” as I always have the ingredients to hand. You can have a batch ready to serve within half an hour of switching on the oven, which is just what I needed today.

I am reluctant to call them Amaretti, the ones I’ve eaten in Italy have a more bitter almond taste to them, At best, these are a soft, chewy version similar to the soft Amaretti Morbidi you sometimes find in Italian restaurants. Crisp and brown on the outside they hold up well to a quick dunk. They are also great to serve with ice cream or as the basis for a trifle.

You can find the recipe here. Best of all they’re naturally gluten and dairy free and low in fat so please most people.

  • I ♥ these so much! Playing and planning with pretty yarns from @pookgb & @bordertart today.
#knittersofinstagram #knitting #transformyouryarn #handdyed #madenotmanufactured #indiedyers #naturalfibres #yarnlove Happiness is a well stocked woodpile! Thanks @delamere_logs - no need for gyms /aerobics when you've spent the afternoon shifting logs and stocking the woodshed!!!
#slowliving #homesteading #woodisgood #delamerelogs #growninbritain #shoplocal #renewableenergy Tiny makes! Finally sewed buttons on this crochet cardi, despite having a drawer full of buttons, I ended up using a scrap of liberty print to cover some blanks. Yarn is @thefibrecompany Luma, which is so soft. The blend of natural fibres make it perfect for baby makes. I buy mine from @tangledyarnuk . Teeny scissors were bought from @beyond_measure_uk

Yes, I know "everyone" on instagram sleeps under crumpled linen duvets, but after 30 years we're still using the king size Thomas the Tank Engine duvet my mother in law made as a house warming present. The other side has a more femenine print so we can take turns. Secretly, this side is my favourite!!

#girlgardener #homesteading #groworganic #ediblegarden #growyourownfood #organicgarden Little acorns. There's something about this colour palette that makes me want to get my knitting needles out - and another part of me that wants to be prepared & find my recipe for oak gall ink!!! Yes, still early August, but part of me is already embracing autumn!!
